This recipe works best with St. Louis style ribs, but you will need to have the butcher cut the ribs crosswise into small sections. Once cut down into smaller chunks, these meaty ribs cook quickly in a flavorful sauce. Before adding the sauce to the ribs wash them in cold water mixed with cornstarch and pat them dry. The rinsing process cleans out any residue from the bones for a cleaner flavor and better appearance. INGREDIENTS Ribs 1 ½ - 2lbs St. Louis style pork ribs, cut crosswise into small sections then cut between the bones to make small chunks Water to cover the ribs 2 tbs cornstarch Sauce 4 tbsp black bean garlic sauce 2 tbs oyster sauce 2 tbs soy sauce 2 tbsp cooking wine or dry white wine 1 tsp sugar 2 tbs cornstarch 3 cloves minced garlic 1” piece of fresh ginger, peeled and slivered 1 small red chili, cut into very thin strips, scattered over the ribs and sauce Sesame oil to drizzle PREPARATION Heat the oven in the Convection Steam mode 212°F. Place the ribs in a large bowl, add water to cover, and the cornstarch. Agitate with your hands, discard the water and rinse for a minute until the water is clear. Pat the ribs dry and place in a large oven-proof baking dish. Mix the sauce ingredients together and pour over the ribs. Drizzle a little sesame oil over the top of the ribs just prior to cooking. Steam Oven Potato Frittata with Kale and Linguica Frittatas are not only a perfect choice for a light, nourishing meal, but they also offer a delightful taste when served warm or at room temperature. In this recipe, we leverage the convenience of a steam oven in the Steam mode to par-cook the potatoes and blanch the kale. This method not only simplifies the preparation process but also enhances the flavor of the potatoes, which retain their natural taste when steamed. Moreover, blanching vegetables in steam is a breeze compared to the hassle of dealing with pans of boiling water. The Portuguese Linguica sausage, seasoned with smoked paprika, adds a unique flavor that pairs exceptionally well with the potatoes and kale. However, feel free to use any sausage of your preference. INGREDIENTS 3 medium-sized yellow potatoes, diced into 1/2" cubes 2 cups kale, coarse stems removed, sliced into thin ribbons 2 tbsp olive oil 1 shallot, sliced 3 cloves garlic, sliced 1/4 tsp dried oregano 1/2 Linguica sausage (mild or hot) cut in half lengthwise and chopped into thin slices 10 eggs, beaten 1/2 cup shredded sharp cheddar cheese PREPARATION Heat the oven in the Steam mode to 212 F. Place the prepped potatoes in the perforated pan and steam for 15 minutes until just tender. Set the potatoes aside to cool, add the kale to the perforated pan, and blanch for 1 minute. Remove the kale from the oven and rinse under cold water. Squeeze the moisture from the kale and pat it dry. Change the oven mode to the Combination Convection Steam Mode 325 F. If your oven has variable humidity options, choose 30%. Next, it's time to prepare the filling. Heat a medium-sized oven-proof skillet over moderate heat. Add the oil, shallots, and garlic, and cook gently for a minute or two until softened. Then, add the potatoes and oregano, stirring well to coat them with the oil. Season with salt and pepper to taste. Cook the potatoes for a few minutes, then stir in the linguica and kale. Be careful not to let the shallots or garlic burn. Cook for three to four minutes, ensuring the flavors are well combined. Once the pan is removed from the heat, the beaten eggs are added, and the frittata is topped with the shredded cheese. This mixture is then placed in the oven to bake for 25 - 30 minutes until it sets into a mouthwatering frittata. The anticipation of the delicious outcome is sure to make your taste buds tingle. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Chicken Roasted with Potatoes and Tomatoes Convection Roast Mode or Convection Bake Mode Chicken pieces roasted on a bed of potatoes and tomatoes mixed with oregano, garlic, and capers are an easy way to create a flavorful one-dish meal. In this recipe, the potatoes and tomatoes tossed together with the aromatics create a wonderful creamy base for the perfectly roasted, crispy-skinned chicken pieces. First, the vegetables and seasoning are combined and placed in a large oven casserole dish. The seasoned chicken pieces are added and gently combined to ensure the oil and seasoning are evenly distributed. Roasted Chicken with Potatoes and Tomatoes The dish is baked in the Convection Bake or Convection Roast Mode at 425 F to ensure the chicken skin crisps and the potatoes cook through. The chicken pieces can be turned partway through the cooking to ensure even browning. Prior to serving, the dish is finished with a handful of chopped fresh basil and oregano and a sprinkle of sea salt. Recipe Ingredients INGREDIENTS 8 chicken pieces (legs and thighs work best for this dish) 2 lbs golden potatoes cut into approx 2” chunks 1 medium yellow onion, cut into large chunks 4 cloves garlic, smashed 4 ripe plum tomatoes, core removed, cut into 1” chunks 1 tbsp capers, rinsed 2 tbsp fresh chopped parsley and oregano leaves Pinch dried chili flakes Approx ½ cups olive oil ¼ cup fresh chopped basil added before serving PREPARATION Position an oven rack in the middle of the oven and heat the oven in the Convection Bake or Convection Roast Mode to 425 F. Season the chicken pieces with kosher salt and pepper and set aside. Combine the potatoes, onion, garlic, tomatoes, capers, parsley, and oregano in a 9 x 13” oven-safe casserole dish—season with kosher salt, freshly ground pepper, and a pinch of dried chili flakes. Add the oil and stir the mixture gently to coat the vegetables evenly. Fold the chicken pieces into the dish so they are also coated with the oil and seasoning, and slide the dish into the oven uncovered. Cook for 25 minutes, then turn the chicken pieces over to ensure even browning. Cook for another 20 - 25 minutes until the chicken has crisped and the potatoes are soft. Instead of preparing the ingredients in individual saucepans prior to assembling the casserole everything can be cooked in the Steam Oven using the Steam Setting at the same time. INGREDIENTS 1 - lb, firm white fish like wild Cod ½ -lb uncooked, shelled & deveined shrimp 3 - cups milk 2 - bay leaves 1 - small onion, peeled & studded with 4 cloves (optional) 4 - eggs 2 - medium russet potatoes, peeled & cut into 1” cubes cheese Bechamel Sauce 6 - tablespoons, butter 3 - tablespoons, flour Topping ¼ - cup grated Cheddar PREPARATION Begin by steaming the potatoes and eggs, in the Steam mode, then add the fish. Be sure to use a timer to keep track of the different cooking times. Steaming the potatoes for mashed potatoes - 30 - 35 minutes Steaming the eggs for hard boiled eggs - 20 minutes Poaching the fish - 6 - 8 minutes While the above ingredients are steaming, prepare a bechamel sauce on the cooktop. When the fish is removed from the oven, set it aside to cool and make a Bechamel sauce with the warm milk. Then when the potatoes and eggs are ready you will layer the seafood into a casserole with the eggs and bechamel sauce and top with the mashed potatoes and a sprinkle of cheese. The casserole can then go back in the oven to heat through or cooled, refrigerated and baked the next day. Place the fish and shrimp in a solid oven pan with the milk and bay leaves and onion, if using. Place the eggs in a perforated pan or they can just rest on the oven rack. Place the potatoes in a solid oven pan with ¼ cup of water and a pinch of salt. Preheat the oven in the Steam Mode 100% Humidity, 212 °F. Place the pans in the oven, set the timer for 6 minutes, remove the seafood and re-set the timer for 15 minutes. When the 15 minute timer elapses remove the eggs and place in cold water to cool. Reset the timer for another 10-15 minutes for the potatoes, they need to be very soft to mash. Remove the seafood, place in a casserole pan, gently flake the fish and set the milk aside to cool. Blanching and Canning in the Steam Oven INGREDIENTS Tomatoes Lemon juice PREPARATION Before cooking tomatoes it’s advisable to remove the skin. To do this in the steam oven, heat the oven in the steam mode, make a cross on the base of the tomato and place the tomatoes in the perforated pan. Place them in the oven and steam for 3 - 4 minutes. When you remove the tomatoes, set them aside to cool, slip off the skins and you are ready to either cook with them or you can go ahead and proceed with the canning. Before canning the first step is to sterilize the jars. Again you will use the Steam mode, simply place the clean jars and lids in the perforated pan and sterilize in the oven for 10 minutes. Once the jars are cool enough to handle you can go ahead and add the tomatoes, with lemon juice and enough boiling water to fill the jar leaving 1/2 “ of space for the tomatoes to expand during the canning. Put the lids and rings on the jars and place them in the perforated pan. Return the pan to the oven and set the timer for 45 minutes. Place the jars in a cool spot in the kitchen to cool down and don’t disturb them for 24 hours. Check that each jar has properly sealed and store them in a cool dark place until ready to use. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Grilled Skirt Steak Convection Broil Grilling in an electric oven using the Convection Broil mode is one of the best ways to get a great sear while preserving the meat's natural juices. Broiling a corn salsa at the same time is an easy way to get a flavor-packed meal on the table with minimum fuss. Nonetheless, when using such high heat it is important to be well organized and have everything at the ready. Remember these important tips: Self-cleaning ovens have a catalyst that absorbs smoke and particulate matter at high temperatures but it is advisable to still run the overhead ventilation to keep the kitchen air clean. Organize the oven racks before you heat the oven, follow the manufacturer's recommendations for the pre-heat time and always broil with the door closed. Not closing the door can damage the electronics. The same cooking instructions can be used for gas ovens that use an Infra-Red broiler, which also excels at retaining moisture while searing. I used a marinated skirt steak from Trader Joe's and it was good but I feel the results with fresh skirt steak that has had a dry rub are even more flavorful. Ingredients For the steak 1lb fresh or marinated skirt steak If using fresh steak, give it a dry rub with your favorite BBQ seasoning and drizzle it with a little vegetable oil. If using marinated steak, blot the steak to remove excess liquid and drizzle with a little vegetable oil. For the broiled corn salsa 2 cups corn kernels (defrosted if using frozen corn) 1 jalapeno pepper, coarsely chopped ½ small sweet onion or 1 shallot, coarsely chopped ½ tsp ground cumin, (optional) 2 cloves garlic, minced ½ cup fresh cilantro leaves, chopped 1 lime, juiced Preparation Turn on your overhead ventilation or downdraft on medium speed to set the airflow in the kitchen. Electric Convection ovens - heat the oven in the Convection Broil Mode Hi or 500 degrees. Gas Ovens - heat the oven in the Broil Mode. Place the meat on a 2-piece oven broil pan. Place in the oven close to the top heating with at least a 3” clearance. Close the door and set the timer for 6 minutes. If the meat is nicely seared then turn it otherwise cook for a few minutes longer. Cook for a few minutes less on the 2nd side and remove the meat from the hot pan to rest when it comes out of the oven. Combine the corn with the jalapeno and onion and toss with enough vegetable oil to coat. Spread onto a rimmed baking sheet and broil in the Convection Broil mode Hi or 475 degrees until the corn begins to char. Remove from the oven and scrape into a bowl, cool for a few minutes then stir in the garlic, cilantro, and lime juice. Season with sea salt and freshly cracked pepper. Slice the meat into thin slices against the grain and serve with the broiled salsa. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Zucchini Lasagna with Turkey, Ricotta and Pesto Convection and Convection Bake Mode This wonderful combination of ingredients makes for a delicious lasagna and the preparation is simplified by baking the zucchini “noodles” in Convection. Whether you are eating a low-carb diet or have a glut of zucchini, this lasagna recipe using zucchini slices instead of noodles is definitely worth a try. Slicing the zucchini only takes a few minutes then they are seasoned and placed in the oven to bake while you prepare the meat sauce. Not only are zucchini more flavorful when prepared this way they will give off less liquid when the lasagna is baked. Once the zucchini and meat sauce are cooking, prepare the cheese and fresh herbs and your delicious lasagna will come together in no time. Overall preparation time is about 40 minutes and the baking time for the lasagna is also approximately 40 minutes. INGREDIENTS 3 large zucchini, end trimmed, cut lengthwise into ¼” thick slices ½ tsp dried oregano 4 tbsp olive oil 2 lbs. ground turkey or beef 1 small yellow onion, chopped 3 cloves garlic, minced ½ tsp mixed Italian seasoning 1 24 oz jar pasta sauce Pinch dried red chili flakes 1 15 oz container ricotta cheese 1 ½ cups shredded mozzarella or 4 cheese blend 1 cup shredded Parmesan cheese 1 egg ¼ cup chopped fresh basil and oregano leaves ¼ cup pesto sauce 1 9x13” oven casserole dish PREPARATION Heat the oven in the Convection or Convection Bake mode at 400 degrees. Arrange the zucchini onto 2 lightly oiled rimmed baking sheets, sprinkle the zucchini with a little kosher salt, cracked pepper, oregano and drizzle or spray a little more olive oil on the top. Slide the trays into the oven and bake for 15 - 20 minutes until beginning to brown at the edges. Remove and set aside. Meanwhile, heat a large heavy pan over medium heat, add a light film of oil to the pan, increase the heat to medium high and add the ground beef. Sear the meat, breaking it up with the back of a spoon until evenly browned. This can be done in batches if necessary. Remove the pan from the heat and transfer the meat to a bowl with a slotted spoon. Place the pan back on the stove and heat over medium heat. Add the remainder of the olive oil and sauté the onion until softened. Stir in the garlic and seasoning and cook for a minute or two. Reserve 1 ⁄ 2 a cup of the pasta sauce to spread on the bottom of the baking dish and add the remainder to the pan together with the cooked beef and a pinch of dried red chili flakes. Bring to a gentle simmer and cook for 15 to 20 minutes. While the meat sauce is cooking, combine the ricotta cheese with the shredded Parmesan cheese and egg, stir in the fresh herbs and add a grind or two of freshly cracked pepper. Arrange the oven racks so one is in the lower third of the oven and change the oven heating mode to Convection Bake 350 degrees. In this mode heat will be directed to the top and bottom of the casserole and the Convection fan will circulate the heat around the oven. Spread the reserved ½ cup of pasta sauce on the bottom of the casserole dish and arrange a layer of zucchini slices across the bottom of the pan. Top with half of the meat sauce and spread half of the ricotta mixture over that, finishing with a sprinkle of ½ a cup of the shredded mozzarella. Repeat the layers, finishing with a final layer of zucchini slices, spread the pesto over the zucchini and the final ½ cup of shredded mozzarella. Place the lasagna in the oven and bake for 40 minutes. For a golden crust, change the oven mode to Broil 425 degrees for 5 minutes at the end of the cooking time. Remove the lasagna from the oven and allow it to rest for 10 - 15 minutes before serving. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Oven Chicken Shawarma Convection Roast or Convection Bake Chicken shawarma can be baked simultaneously with other foods to create a delicious Convection meal This video shows how to cook chicken shawarma, baked falafel, and rice pilaf in Convection. Chicken Shawarma is normally served in pita pockets, but I am serving it as a meal over rice. A fair number of spices are required for the chicken shawarma and ideally, the chicken should be combined with the spice mix a few hours in advance of cooking. I used a very good Falafel mix from Trader Joe's and changed the ratio of water to oil in the mix for baking in the oven. The rice can also be cooked in the oven in a covered casserole or pan. After all, why turn on the cooktop when the oven is already on? Because turmeric powder does stain mix the spices over a washable cutting board and wear gloves or use a stainless steel spoon to combine the spices with the chicken. INGREDIENTS 8 boneless skinless chicken thighs, cut into 1” thick strips 1 medium red onion, thinly sliced ½ tsp ground cumin ½ tsp ground coriander ½ tsp garlic powder ½ tsp ground turmeric ½ tsp milk smoked paprika ½ tsp Kosher salt ¼ tsp ground cayenne pepper or more if you prefer more spice 1 lemon, juiced ⅓ cup olive oil PREPARATION Place the chicken in a glass casserole dish with the onion. Combine the spices, sprinkle over the chicken, and turn to distribute evenly. Add the lemon juice and olive oil and refrigerate for 1 - 3 hours. Allow the chicken to come to room temperature before cooking. Organize the oven racks to accommodate all the dishes. Heat the oven in the Convection Roast or Convection Bake mode at 375 degrees. Spread the chicken onto a lightly oiled, rimmed baking sheet (foil lined for easy clean-up). Place the chicken in the upper part of the oven and cook for 20 - 25 minutes until the onions begin to brown and the chicken is firm. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How to Bake Ham in Convection Convection Mode (not Convection Bake or Convection Roast) When using the convection mode you can safely heat the ham without any foil and cook other dishes at the same time. Traditional recipes recommend covering the ham which is already cooked with foil to prevent drying during the heating process, then removing the foil towards the end of the cooking and brushing the ham with a glaze to add a little pizazz to the ham. If your oven features a Convection Mode (not Convection Bake or Convection Roast), it means that the heat is only generated from the Convection element surrounding the fan and will evenly heat the food from the edge to the core. Using this mode you can safely heat the ham without any foil and cook other dishes at the same time. Ingredients 1 Baked ham Preparation Convection Method Heat the oven to 300 degrees in the Convection Mode. Place the ham on a rack in a shallow pan and add ½ cup of water or stock to the pan. This will prevent any sugar in the glaze from sticking to the pan and burning. Allow 10 minutes per pound to heat the ham or use the oven meat probe programmed to 130 degrees. Meats should be cooked on a rack in a shallow pan allowing the heat to circulate around the meat and penetrate from the edge to the center. Large roasts such as bone-in Rib Roasts can be cooked directly on the roasting pan as the bones create a natural rack. Roast Heritage Turkey Temperatures: typically a higher temperature for searing is recommended at the beginning of the cooking time but too high a cooking temperature over a long cooking time can result in overcooked edges and underdone center. Always add resting and carving time to the overall cooking time. 10 minutes for smaller cuts of meat 20 - 30 minutes for larger cuts of meat. In this mode, the heating elements cycle with maximum intensity Cooking an Entire Meal Before you begin, calculate the cooking and resting time of the meat to determine when to add the vegetables or other side dishes. Ideally, side dishes should be ready to come out of the oven when the meat is carved and ready to serve. Determine best rack positions to accommodate all the cooking trays and achieve desired results before heating the oven.
